After three and a half years of internment, Luigi Vergano took a proactive approach: if he couldn't get approval to return to the UK then he offered his services as a cookery teacher or chef as a way of being granted release to industry.

His letter to The Commandant of Tatura Camp 2 outlines his extensive experience in hospitality and his willingness to work within the industry in Australia. 

On the 20th June 1944, Luigi was released to Melbourne for employment as a cook for the Commercial Travellers Association.
